I have a friend that makes the most beautiful cake pops you will ever see. Not only are they pretty, they taste amazing.
The first time I tried to make cake pops it looked like a 5 year old did it. I sent her a picture and we both laughed so hard. We still laugh about it to this day.
She makes cake pops look easy to do. Let me tell you, they’re not that easy.
I obviously love finding craft projects on Pinterest. Usually when I try something it turns out pretty good. I’m not trying to toot my own horn, but I’m not usually disappointed in myself.
With the cake pops I was very disappointed. That was almost two year ago, but I’m not one to give up. Every couple of months I try to make them again.
Since I have improved my cake pop making skills I wanted to try something fun for Thanksgiving. I’ve been watching a lot of the Halloween baking shows on Food Network and it inspired me to try and make a cornucopia out of Rice Krispie treats.
Since cornucopias are usually brown I thought wouldn’t it be a great idea to make them out of Cocoa Krispies!? I honestly didn’t even know if they still made them, but they do!
I searched Pinterest to see if there was something I could use to help me shape it into a cornucopia. The closest thing I could find was a wine bottle, but that was too long and narrow.
Then it hit me, I could use a funnel! I searched for a “funnel” online at Target and found what I needed. It wasn’t a baking funnel, it was a funnel for cars.
It was perfect! And it only cost $1. That’s cheaper than the baking funnels.
The Cocoa Krispies came with instructions on making Rice Krispie treats. I omitted the butter but followed the other instructions.
I used 4 cups of mini marshmallows and 6 cups of Cocoa Krispies.
I put the marshmallows in the microwave for 1 minute on high. I stirred them, then put them in for 30 seconds and stirred again. I did this until they were completely melted and had a smooth consistency.
Then I added the Cocoa Krispies to the melted marshmallows and stirred them together. You have to work quickly so the marshmallows don’t start to harden.
Once they were mixed together and slightly cooled it was time to shape them around the oil funnel. I googled a picture of a cornucopia and used that as a reference as I molded the Cocoa Krispie treats to the funnel.
Once I was happy with the shape I let it sit over night. That way it would harden and I could safely remove the funnel.
The only thing left to do was make the dreaded cake pops. This time I had a secret weapon, I bought a Babycakes Cake Pop Maker. I had never used it before so it could’ve gone either really good, or really bad.
Luckily, it went really good. The Cake Pop Maker comes with instructions for making the batter. You put 1 tablespoon of batter into each hole of the cake pop maker and let it cook for 4-6 minutes. Remove them, then let them cool. That’s it! You don’t have to break up the cake, mix it with frosting and roll it into balls. It’s much easier!
I bought candy melts to decorate the cake pops. I used chocolate, peanut butter, orange and yellow. All Thanksgiving colors.
Once the cake pops were done I could decorate my cornucopia. I paced the cornucopia on a wood platter I have, then added the cake pops into the cornucopia and on the platter.
I love the way it turned out!
